Chicken Salad is a salad with chicken as the main ingredient. Other common ingredients may include mayonnaise, boiled eggs, celery, onions, pepper, pickles (or pickled pickles) and various mustards.
In the United States, "chicken salad" refers to a salad with chicken, or a special mixed salad consisting mainly of minced chicken and binder, such as mayonnaise or salad dressing. Like tuna salad and egg salad, it can be served on lettuce, tomato, avocado, or some combination of these. It can also be used for sandwiches. Usually made with leftovers or chicken cans. It can also refer to a garden salad with fried chicken, roasted, or roasted (usually cut or diced) on top of it.
In Europe and Asia salads can be fitted with a variety of dressings, or no dressings at all, and salad constituents can vary from traditional leaves and vegetables, pasta, couscous, noodles or rice.
The early American chicken salad recipe can be found in Southern 19th century cookbooks, including Sarah Rutledge's "The Carolina Housewife: Or, House and Home" (1847) and Abby Fisher "(1881). Rutledge details the recipe for "Salad A Eaten With Cold Or Chicken Meat" that explains how to make mayonnaise from scratch, before adding it to cold meats (chicken and seafood).
SALAD TO EAT WITH COLD COFFEE OR FOWL. Raw egg yolks, a teaspoon of artificial mustard tea, (preferably mixed the day before), half a teaspoon of salt. Mustard and salt to be rubbed together; then add the eggs. Pour the sweet oil very slowly, rub hard all the time, until as many as made as desired. Then add a spoon full of vinegar. When these ingredients are mixed, they should look very smooth. If it thickens, add a little more mustard, or a little bit of vinegar. With shrimp or oysters, a bit of red pepper rubbed, is an improvement.
Abby Fisher also describes the making of homemade mayonnaise, before adding it to chicken and white celery.
One of the first American chicken salads was served by Town Meats in Wakefield, Rhode Island, in 1863. The original owner, Liam Gray, mixed the remaining chicken with mayonnaise, tarragon, and grapes. It became a very popular item so the meat market was converted into a food store.
