A croque monsieur ( French pronunciation: Ã, [k ?? km? sjÃÆ'¸] ; French for "mister crunch") is a ham sandwich and grilled or fried cheese. This dish comes from a French cafe and bar as a quick snack. A croque madame (French for "mistress crunch") is a dish variant with fried eggs.

The name is based on the verb croquer ("bite, chew") and the word monsieur ("mister"). The discovery of the first sandwich recorded on the Paris cafe menu was in 1910. The earliest mention in the literature seems to be in volume two of Proust's In the Lost Time Search in 1918.

A croque monsieur is traditionally made with boiled ham between slices of brioche such as pain de noodles with shredded cheese and a little salty and pepper, baked in an oven or fried in a frying pan. This dish can also be made with plain butter bread, with a soft crust. Instead of buttered bread, bread can be selected to be browned by grilling before dipped in beaten eggs. Traditionally, Emmental or GruyÃÆ'¨re is used, or sometimes cheese ComtÃÆ'Â © also. Some brasseries also add BÃÆ'Â © sauce chapel.

Croque monsieur may be roasted or fried until the cheese melts and forms a crust. This can be done in a small horizontal grill designed to bake sandwiches.

Variations

A croque monsieur served with a boiled or fried egg on top is known as croque madame (or in the Normandy section a croque-ÃÆ' -cheval ). Many dictionaries associate the name with an egg that resembles an ancient woman's hat. According to the dictionary of Petit Robert , the date is about 1960. The name croque-mademoiselle is associated with a lighter version, vegetarian: made of the same bread, but with ordinary melting cheese, accompanied with green onion, cucumber and salad.

Snack of ham and cheese sandwiches, very similar to croque-monsieur although not containing bà © chamel or egg, called tosti in Holland, and toast (pronounced "tost") in Italy and Greece. Similarly, in the UK snack ham and hot cheese are called 'toastie', and toast makers are available for purchase. In the United States, Monte Cristo, a ham-and-cheese sandwich that is often dipped in eggs and fried, is a popular restaurant dish, and 'grilled cheese bread' is a classic sandwich that has been enjoyed at home and restaurant cafeteria style since the Great Depression. This version of the sandwich in Spain replaces the ham with sobrassada, a soft sausage from the Balearic Islands that can easily spread. In Catalonia is known as a bikini.

The sandwich variant with substitution or additional ingredients is given a name that is modeled on the original croque-monsieur , for example:

  • croque auvergnat (with bleu d'Auvergne cheese)
  • croque norvÃÆ' Â © gien (with smoked salmon instead of ham)
  • croque tartiflette (with potato slices and Reblochon cheese)
  • croque bolognese/croque Boum-Boum (with Bolognese sauce)
  • croque seÃÆ' Â ± or (with tomato salsa)
  • croque Hawaiian (with a piece of pineapple)

The prominent French chef Jacques Pepin also makes a version of using chicken instead of ham, which he showed in the episode "Our Favorite Sandwiches" on the PBS series (and his cookbook coordinated with the same title) Julia and Jacques Cooking at Home at where he works with Julia Child.
