Bologna sausage , sometimes called nonsense ( ) and known in South African English as poloni , is sausages derived from mortadella, pork-like pork sausages that are finely ground, containing pork fat cubes, are from the Italian city of Bologna ( IPA: Ã, [bo'lo? a] Ã, ( listen ) ). In addition to pork, bologna can be made from chicken, turkey, beef, venison, combination, or soy protein. Typical condiments for bologna include black pepper, nutmeg, allspice, celery seeds, and coriander, and like a mortadella, myrtle berries provide a distinctive flavor. US government regulations require American bologna to be ground smooth and without visible pieces of fat.

Lebanese bologna is a Dutch prepared meat of Pennsylvania. While the bologna is nominal, it is a dry sausage, which resembles salami.

Ring bologna
Ring bologna is much smaller in diameter than the standard bologna. More suitable for slicing and serving crackers as a snack or hors d'oeuvre. These are generally sold as whole links rather than sliced. Links are arranged as semi-circles or "rings" when set up for sale (hence the name). Bologna pickles are usually made of bologna rings soaked in vinegar and typical pickle spices. Usually served in chunks as a cold snack.
Rag bologna
Rag bologna is a long stick, or "chub", from a high-fat bologna traditionally sold wrapped in a washcloth. This recipe has a higher filler content than regular bologna. Dairy, flour, cereal, and spices are added during processing, and the bologna rolls are bathed in lactic acid before being coated with paraffin wax. This type of bologna originates from West Tennessee and the surrounding area and is generally not available outside this area. Usually eaten on white bread with mustard and pickle, but also a family meeting point, where thick slices are smoked and burned along with other meats. In Newfoundland, a kind of bologna rag is called a thick and fried sliced ââ"wax" bologna, called the "Newfie steak".
Polio South Africa
South Africa calls bologna exclusively as a polony, although South African polio is usually made using processed meats. These processed meat products are usually brightly artificially pink, and food for low-income people because of their low cost. Very small sausages of the same content and color are also called polony in New Zealand and Australia. The large pink and bland polonies are called French polony, with thinner scrolls called only as polonies. Garlic Polony is also widely available.
By 2018, a South African factory producing poloni and other processed meats is associated with the deadliest listeriosis epidemic in history, which left 1000 people dead, killing at least 180 people.
Vegetarian bologna
Various versions of vegetarian and vegan policies are available. A typical British recipe uses soy and wheat protein instead of lean meats and palm oil as a fat substitute along with starch, carrageenan, and flavorings. It can be eaten cold or cooked in the same way as traditional poloni.
