French Dip Sandwiches

In American cuisine, French bacon dip sandwich, also known as beef dip, is a hot sandwich consisting of slices of roast beef (or, sometimes, other meats) on " French roll "or baguette. Usually served with Swiss cheese, onions, and a side of the sauce (au jus, "with juice"), and that is, with beef juice from the cooking process. Beef broth or beef consommÃÆ'Ã… © sometimes replaced. Regardless of its name, this American specialty is completely unknown in France itself, the name seems to refer to the style of bread, not the alleged French origin.

Although the most common sandwiches are served with a cup of juice or a broth on the side of the plate, where the sandwich is dipped as it is eaten, this is not how the sandwiches were served when it was created.

Two Los Angeles restaurants have claimed to be the birthplace of a French sauce sandwich: Cole Pacific Electric Buffet and Philippe the Original. The Philippe website describes the dish as a "house specialty", and the words "House of French Dip Sandwich" is on the restaurant logo. At Phillippe's, the rolls are dipped in hot beef juice before the sandwich is assembled, and served "wet", while at Cole is served with a side of beef juice. Sandwiches can also be requested "double dipped" in both establishments. Both restaurants present their own spicy mustard brand traditionally used by customers to complement the sandwiches.

The controversy over who started the sandwiches remains unsolved. Both restaurants were founded in 1908. However, Cole's claim came from a sandwich shortly after the restaurant opened in 1908, while Philippe's claim that Philippe Mathieu's owner found it in 1918.

The story of sandwich discovery by Philippe has several variants: some sources say that it was first made by a chef or server who, while preparing a sandwich for a police officer or firefighter, accidentally dropped it into a pan of droplets of meat. The patron liked that, and the dish jumped in popularity shortly after his discovery. Other accounts say that customers who do not want a few drops of meat to go to waste ask for their sandwich dipped in it. Still others say that a chef dips a sandwich into a pan of droplets after a customer complains that his bread is stale. Cole's account states that the sandwich was invented by a sympathetic chef, Jack Garlinghouse, for customers complaining of gum pain. Some accounts tell the events of the Philippe version, but assign the location to Cole. The mystery of sandwich invention may not be solved because of the lack of information and observable evidence.

French dip is now served in a number of chain restaurants including fast food places, restaurants and standard restaurants.
