St. Paul's sandwich can be found in many Chinese American restaurants in St. Louis. Louis, Missouri, as well as other cities in Missouri, including Columbia, Jefferson City, and Springfield. The sandwich consisted of a young patty egg (made with bean sprouts and chopped garlic) served with sliced ââpickles, garlic, mayonnaise, lettuce, and tomatoes between two slices of white bread. Sandwich St. Paul is also present in various combinations and specials, such as chicken, pork, shrimp, beef, and other varieties.

Origin
One source has the origins of St. Paul from the early 1940s, when Chinese restaurants created sandwiches as unique dishes in the form of a more intimate sandwich that would appeal to Midwestern Americans, an early example of a fusion of cuisine. According to local legend, St. Paul was discovered by Steven Yuen at Park Chop Suey in Lafayette Square, a neighborhood near downtown St. Louis. Louis; Yuen named the sandwich after his hometown at St. Paul, Minnesota.
Foodwriters James Beard and Evan Jones believe that Denver or Western sandwiches were created by "many Chinese chefs who cook for logging camps and railroad gangs in the 19th and early 20th century" and probably come from young foo eggs. They believe that the early Denver sandwich is actually a St. Sandwich sandwich. Paul.
This sandwich is featured in a documentary of the PBS Sandwich You Will Love in 2003 and will be featured in a book by Kelly Pratt artist to be released in 2016 called Stately Sandwiches as a sandwich selected to represent the state of Missouri.
