Hot Brown Sandwich (sometimes known as Louisville or Kentucky Hot Brown ) is an American hot sandwich originally made at Brown Hotel in Louisville, Kentucky, by Fred K. Schmidt on 1926. It is a variation of the traditional rarebit of Wales and is one of two signature sandwiches made by chefs at the Brown Hotel not long after its founding in 1923. It was created to serve as an alternative to late night ham and egg dinner.

Materials

The Hot Brown is an open turkey and bacon sandwich, covered with Mornay sauce and roasted or baked until the bread is crisp and the sauce begins to brown. Many Hot Browns also include ham with turkey, and either pimentos or tomatoes on top of the sauce, and the Hot Browns replica sometimes replaces the commercial cheese sauce instead of Mornay.

The more common alternatives to Hot Brown include using Cheddar cheese or American cheese for the sauce. Alternatives to garnish include tomatoes, mushroom wedges, and, very rarely, canned peaches.

When Fred K. Schmidt invents Hot Brown, his roast turkey is something rare, because turkey is usually reserved for holiday parties. The original Hot Brown includes a sliced turkey over white-coated white bread, with Mornay sauce covering it, with a sprinkling of Parmesan cheese, complemented by baked until tender. Pieces of Pimento and bacon are then added to it. After its debut, it quickly became the choice of ninety-five percent of customers to Brown Hotel's restaurant.

This dish is typical local and regional favorites of Louisville, and popular throughout Kentucky. It's been a long time unavailable at the point of origin, because Brown Hotel closed from 1971 to 1985.

In St. Louis, Prosperity Sandwich is a similar dish, with origin at the Mayfair Hotel in the 1920s. It's still served in the area today, and is sometimes called "hot chocolate".

The Devonshire of Turkey, first presented in Pittsburgh, Pennsylvania in the 1930s, has been described as similar to Hot Brown.
